Juicy baked chicken marinated in lemon, garlic, and fresh rosemary. A weeknight staple.

Instructions

    In a bowl or zip-lock bag, combine olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, onion powder, black pepper, and smoked paprika.

    Add chicken breasts and turn to coat. Marinate for at least 20 minutes at room temperature, or up to 8 hours in the refrigerator.

    Preheat oven to 400°F. Remove chicken from marinade and place in a baking dish.

    Pour any remaining marinade over the chicken.

    Bake uncovered for 22–26 minutes, until internal temperature reaches 165°F at the thickest part.

    Remove from oven and tent loosely with foil. Rest for 5 minutes before slicing.

The longer the marinade, the more flavor — even 20 minutes makes a real difference. If you have time, marinate overnight and dinner practically makes itself.
