Pan-seared with fresh dill, lemon, and garlic — omega-3 rich and wonderfully flavorful.

Instructions

  1. 1

Pat salmon fillets dry with paper towels and place skin-side down on a plate.

  2. 2

In a small bowl, whisk together olive oil, minced garlic, dill, parsley, lemon zest, lemon juice, black pepper, and onion powder.

  3. 3

Spoon the herb mixture evenly over the top of each salmon fillet. Let marinate for 10 minutes at room temperature.

  4. 4

Heat a large non-stick or cast iron skillet over medium-high heat. No additional oil needed.

  5. 5

Place salmon fillets skin-side up in the hot pan. Sear for 4 minutes without moving.

  6. 6

Carefully flip each fillet. Cook skin-side down for another 4–5 minutes until the skin is crispy and the fish flakes easily with a fork.

  7. 7

Internal temperature should read 145°F at the thickest part.

  8. 8

Remove from heat and rest for 2 minutes. Serve with fresh lemon slices.

Meredith's Tip

Don't skip the rest time — it lets the juices redistribute and keeps every bite moist. Leftovers flake beautifully over a salad the next day.
